This is a very ancient Sicilian cheese whose origin is in the Sicani Mountains. The first cheese maker abandoned the cheese to avoid robbery and when he found it he shout: the “tuma lost” since persa in Italian is lost. Its taste is spicy but never salty, with a lasting aromatic aftertaste. The rind is ochre yellow that becomes darker since it is covered with oil and smashed pepper during the preparation. The texture is compact with no holes and a pale yellow color.

Pairing: it is very good if paired with raw vegetables and a spicy white wine.
